Weeks Worth Of Posts.

tut tut tut to me, bad blogger, I haven't posted at all this week, reason being I started a new job on Tuesday and I have been so tired when I've come home that I haven't had chance to blog. Also being in a new work environment I have found it rather tricky to stay on plan this week, because I am finding my feet, have been buying lunch instead of taking my own in and where I have been out the house all day I haven't been able to do my 30 Day Shred at all, and we had a party last night in aid of Macmillan Nurses and I wasn't going to deprive myself of the nice nibbles we had and the wine, because it's not fair, Slimming World is meant to make you feel like your not dieting so that's why I had some treats.
So, I cannot remember what I have eaten this week, I wasn't keeping a food diary, so I just have a collection of photo's from this week and then next week I shall be back to daily posts and back on plan.

❥ TOP LEFT -  weigh in day lunch, low fat super noodles (free food) with cherry tomatoes and fried onions (super/free)
❥ TOP RIGHT - weigh in day results, was over the moon.
❥ BOTTOM LEFT - first day at my new job
❥ - BOTTOM RIGHT - chicken with rice and roasted veg (all free)

❥ TOP LEFT - baked beam lasagne with cottage cheese, peas, sweet potato chips and tomatoes
❥ TOP RIGHT - homemade SW salmon fishcakes, peas, chips, tomatoes and cheese (hexa)
❥ BOTTOM LEFT - sausage, mash, beans, fried onions and cheese (hexa)
❥ BOTTOM RIGHT - salmon and scrambled egg, 2 dark rye ryvittas (hexb) and cheese (hexa)

❥ LEFT - in the process of making chocolate treats.
❥ RIGHT - the finished product, chocolate coated strawberries and marshmallows

So, their we have it, a round up of my week, I really am prepared for a gain when I step on those scales tomorrow, so we shall see.

Slimming World Chicken Chow Mein.

Whenever I go to a Chinese restaurant I always fill up on chicken chow mein, noodles anything like that because it's my favourite and no shop makes a pre-made chicken chow mein the same, so I literally only have it when I go to a Chinese. I saw on the Slimming World app this recipe and of course I had to give it a go, my word it was delicious.

Information:
Serves 4 People.
Preparation time: 15minutes.
Cooking time: 30-40minutes.
Syns per serving: FREE

Ingredients:
♥ 8tbsp light soy sauce
♥ 4 garlic cloves (crushed)
♥ 1tsp of Chinese 5 Spice powder
♥ 3 skinless chicken breasts (sliced)
♥ 397g dried egg noodles
♥ large bag of mixed stir fry veg
♥ 8 spring onions (sliced diagonally)
♥ 2 tbsp dark soy sauce
♥ FryLight

How to cook Chicken Chow Mein:
1) Mix the light soy sauce, garlic, 5 spice powder in a bowl, add the chicken, toss to coat evenly and then set aside to marinate for 20minutes.

2) Meanwhile, cook the noodles according to the packets instructions, then drain. Spray a large frying pan or wok with fry light, add the chicken, then stir fry on a high heat for 4-5 minutes.

3) Add the vegetables and spring onion, stir fry together for another 4 - 5minutes. At this point, I added some more soy sauce and Chinese spice to get the flavours around all the ingredients.

5) Add the noodles and dark soy sauce (and more spice if you fancy, I did) toss together, stir fry for a extra few minutes to let all the flavours combine together.

6) Serve in warmed bowls. You could serve this with other things, such as lemon chicken, chicken skewers, rice or anything else, but I just had it by itself.

Slimming World Colourful Carbonara

As I have already mentioned in my first recipe post, I am a huge pasta, pizza anything Italian fan, whilst flicking through the seven day menu on the Slimming World App, I came across this 'Colourful Carbonara' which I really wanted to try, as I love carbonara and I love vegetables, so to have the two combined seemed like perfection... and it was.

Information:
Serves 4 People.
Preparation Time: 15 minutes
Cooking Time: 15-20 minutes
Syns per serving: FREE

Ingredients:
♥ 312g dried pasta
♥ 170g smoked back bacon ( trim all the fat)
♥ 2 garlic cloves
♥ 1 green chilli ( deseeded + chopped)
♥ 198g frozen peas (defrosted)
♥ 2 medium tomatoes (chopped)
♥ 3 large egg yolks
♥ 100g quark
♥ salt + pepper

How to cook Colourful Carbonara:
1) Boil the pasta, as per the packet instructions.

2) Meanwhile, cook the bacon in a non-stick frying pan for 3-4minutes. Add the garlic and chilli, then cook for another 3 minutes, then add the peas, tomatoes and cook for a minute or so, to heat through.

3) In a small bowl, whisk the egg yolks and quark together, with some seasoning.

4) Ladle some of the pasta cooking water into a cup, reserve it and drain the rest away. Place the pasta back in the saucepan, add the bacon and veg, stir it together.  Remove from the heat, stir in the egg/quark mixtures, adding the saved cooking water to loosen the sauce.

5) Serve into warm bowls or onto plates and serve with a crunchy salad.
